Cake that melts in your mouth

  1. Preparation:
    • Preheat your oven to 320°F (160°C).
    • Line the bottom and sides of the cake pan with parchment paper.
    • Prepare a large baking tray for a water bath by filling it halfway with water and placing it in the oven while it preheats.
  2. Make the Batter:
    • In a small saucepan over low heat, melt together the cream cheese, butter, and milk until smooth. Remove from heat and let it cool slightly.
    • In a large bowl, whisk the egg yolks until smooth, then slowly add the cream cheese mixture, whisking until well combined. Add the sifted cake flour and cornstarch, lemon juice, and zest (if using), mixing until the batter is smooth.
    • In a separate bowl, beat the egg whites with an electric mixer until foamy. Add the cream of tartar, then gradually add half of the granulated sugar, continuing to beat. Once soft peaks form, gradually add the remaining sugar and beat until stiff peaks form.
    • Gently fold the egg whites into the cream cheese mixture in thirds, being careful not to deflate the mixture.
  3. Bake:
    • Pour the batter into the prepared pan and smooth the top with a spatula.
    • Place the cake pan into the preheated water bath in the oven.
    • Bake for 25 minutes at 320°F (160°C), then reduce the temperature to 280°F (140°C) and bake for another 55 minutes, or until set but still wobbly in the center.
    • Turn off the oven, leave the door slightly ajar, and let the cheesecake cool inside the oven for 1 hour. This gradual cooling helps prevent cracking.
  4. Finish:
    • Once cooled, remove the cheesecake from the pan and peel away the parchment paper. Chill in the refrigerator for at least 4 hours, preferably overnight, to set completely.
    • Before serving, dust the top of the cheesecake with powdered sugar for a beautiful finish.
