Cheeseburger Meatloaf

Cheeseburger Meatloaf is a fun twist on two classic dishes: the hearty, comforting meatloaf and the beloved cheeseburger. This recipe combines the flavors and textures of a cheeseburger into a delicious, oven-baked meatloaf, complete with all the traditional fixings like cheese, pickles, and a ketchup glaze. Here’s how to make it:


For the Meatloaf:

  • Ground beef: 2 pounds, ideally 85/15 for a bit of fat which keeps the loaf moist.
  • Breadcrumbs: 1 cup, helps to bind the meatloaf while keeping it tender.
  • Eggs: 2 large, for binding.
  • Onion: 1 medium, finely chopped.
  • Garlic: 2 cloves, minced.
  • Ketchup: 1/4 cup, plus extra for glazing.
  • Mustard: 2 tablespoons, yellow or Dijon for a bit of tang.
  • Worcestershire sauce: 2 teaspoons, adds a deep savory flavor.
  • Salt and pepper: To taste.
  • Cheddar cheese: 1 cup, shredded. You could also use slices if you prefer a layer of cheese in the middle.

For the Topping:

  • Ketchup: 1/2 cup.
  • Mustard: 1 tablespoon, mixed with the ketchup for the glaze.
  • Brown sugar: 2 tablespoons, adds a touch of sweetness to the glaze.

Optional Add-ins:

  • Bacon: Cooked and crumbled to be mixed into the meat or layered on top.
  • Pickles: Chopped, to be mixed into the meatloaf or used as a garnish.
  • Tomato: Slices to layer in the middle or chopped to mix in.
