Here’s how to create this mouthwatering spread.

Fried Chicken

  • 2 lbs chicken pieces (legs, thighs, breasts)
  • 2 cups buttermilk
  • 1 cup all-purpose flour
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying

  1. Marinate the Chicken: Season the chicken pieces with salt and pepper. Pour the buttermilk over them and let marinate for at least 1 hour in the refrigerator, preferably overnight.
  2. Prepare the Flour Mixture: Mix the flour with paprika, garlic powder, onion powder, salt, and pepper.
  3. Dredge and Fry: Heat oil in a deep fryer or large pot to 350°F (175°C). Remove the chicken from the buttermilk, dredge in the flour mixture, and fry until golden brown and cooked through, about 15-20 minutes, depending on the size of the pieces. Drain on paper towels.

Fried Catfish

  • 4 catfish fillets
  • 1 cup cornmeal
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying
