Beef Stew for Breakfast

  • 3 carrots, peeled and sliced
  • 2 medium potatoes, peeled and cubed
  • 1/4 cup tomato paste
  • 4 cups beef broth
  • 1 cup strong brewed coffee (for a morning kick)
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 2 bay leaves
  • Fresh thyme, a few sprigs
  • 1 cup frozen peas
  • 2 tablespoons all-purpose flour (optional, for thickening)

  • Fresh parsley, chopped
  • Crusty bread or soft rolls
