For the Soup:

  • Olive Oil: 2 tablespoons
  • Onion: 1 large, diced
  • Garlic: 3 cloves, minced
  • Carrots: 2 large, peeled and diced
  • Celery: 2 stalks, diced
  • Potatoes: 2 medium, peeled and cubed
  • Zucchini: 1 medium, diced
  • Green Beans: 1 cup, trimmed and cut into 1-inch pieces
  • Diced Tomatoes: 1 can (14.5 ounces), with their juice
  • Vegetable Broth: 6 cups
  • Bay Leaf: 1
  • Dried Thyme: 1 teaspoon
  • Salt and Pepper: To taste
  • Parsley: Fresh, chopped for garnish

Optional Additions:

  • Spinach or Kale: 1 cup, chopped (add towards the end of cooking)
  • Corn: 1/2 cup, frozen or fresh
