For the Steak and Potatoes:

  • Steak: 1.5 pounds of ribeye or sirloin, cut into 1-inch cubes
  • Potatoes: 1.5 pounds of baby potatoes, halved or quartered depending on size
  • Garlic: 4 cloves, minced
  • Butter: 4 tablespoons, unsalted
  • Olive oil: 2 tablespoons, for cooking
  • Salt and pepper: To taste
  • Fresh thyme: 2 teaspoons, or 1 teaspoon dried thyme

For the Garlic Butter Sauce:

  • Butter: 2 additional tablespoons, unsalted
  • Garlic: 2 cloves, minced
  • Fresh parsley: 2 tablespoons, finely chopped for garnish


  • Large skillet: Preferably cast iron for even heating and good searing capability
